When someone says summer, I think fresh, simple delicious foods that don’t require the oven! This easy mango salsa is one of my favorites, it comes together quickly making it perfect for busy summer days!
Summer vacation kicked off on Tuesday and I was ready to celebrate with this delicious Mango Salsa. Let me tell you, in the warm summer months, I could eat salsa every day of the week and twice on Sundays. It’s refreshing and a great way to increase your daily vegetable intake without really thinking about it.
Start by opening a can of Hunt’s Diced Tomatoes and draining the excess liquid. While the tomatoes are draining, dice the jalapeño and red onion, peel and chop the mango, and roughly chop some cilantro.
Combine the diced tomatoes, mango, red onion, jalapeño, and cilantro along with a squeeze of lemon juice and some salt and pepper in a small bowl.
The bright colors in this mango salsa are so vibrant. After the long, cold winter we endured in New England, these summer colors are more than welcomed!
Be sure to stir the salsa well. The jalapeño can sometimes be sneaky and try to hide out in one spot. You don’t want to get an entire bite of jalapeño!
Cover and refrigerate thirty minutes before serving. When I have the chance, I like to make this a day ahead. Salsas taste best when the flavors are given the opportunity to marry.
This mango salsa is delicious on fish tacos, served along side grilled chicken, or eaten with tortilla chips. It’s so refreshing, it screams summer!
