This year on Mother’s Day, The Texan will be out of town for a Rugby tournament. Yes, I know I am a good wife. Great in fact. But that isn’t what this post is about! This post is about easy Mother’s Day meals.
I know that I will not be the only mom that doesn’t have a partner to shower her with breakfast in bed and other lavish things during the day. So, I need to whip up some easy Mother’s Day meals to share with The Boy.
The Boy loves foods that have a Mexican influence. One of his favorite snacks are tortilla chips with Chi-Chi’s salsa. My plan is for The Boy and I to make Black Bean and Corn Salsa Tacos for lunch.
Doesn’t that look amazing? It takes just a few minutes to put together and I love that The Boy will eat it without questions!
Spending Mother’s Day with just The Boy will give me an even greater appreciation of how fortunate I am to be a mother. To be his mother. There are many women in the world who aren’t able to conceive or who have lost a child. On Mother’s Day, I’ll think of them. And know that I am a lucky, lucky woman.
