In the warm months of summer, I love to sit in my backyard munching on light and healthy appetizers while The Texan mans the grill. I’m excited to whip up this wonderful salsa recipe that Sarah from Everyday Easy is sharing as this week’s featured guest blogger.
Hi everyone! I am Sarah from Everyday Easy and I am so happy to be here today! My sister and I blog together and love to share recipes, crafts, fast-fix organization tips, and other little tid-bits to make everyday happenings a little happier!
One of my favorite things to make for a crowd is salsa and this recipe always seems to be a hit. The best thing about it is you can tweak it here and there to your liking -I’m not sure that it has ever been exactly the same each time I’ve made it. This mild salsa makes quite a bit – perfect for a summertime bbq or potluck!
What you need:
2 cans Italian style diced tomatoes
1 bunch cilantro, finely chopped
1/2 small onion, finely chopped
2 cloves garlic, minced
2 limes, juiced
1 avocado, peeled, pitted, and diced
1/2 red bell pepper, diced
2 tsp. olive oil
What you do:
Drain white corn and put in a large bowl.
Drain and rinse black beans and add to the corn.
Add tomatoes.
Add remaining ingredients and mix well! Taste testing along the way is definitely allowed. 🙂
This is perfect for a snack…
Or to feed a crowd!
Try spooning it on tacos, nachos, or quesadillas for a little added flavor. I hope you all enjoy…thanks for having me today Emily!

Very different from the salsa I’m used too, it looks like a lot more fun! I will definitely have to try that one night when we have quesadillas.
