What’s the first thing that comes to mind when your husband tells you that college football season is just ten days away? Well, if you’re like me it’s “Oh, how should we celebrate? What kind of game day food should we serve?!” Typically, I’m all set when it comes to appetizers and entrees; I love to make spinach artichoke dip and buffalo chicken pizza. Dessert always stumps me.
You can imagine how excited I was to find these awesome Jell-O University Molds while browsing Walmart.com for school supplies. I snagged a great coupon, too! You can save 75¢ on ONE (1) JELL-O University Mold Kit when purchasing from Walmart.com.
BAM! I added those bad boys to my cart in less time than it takes to say “Hook ’em, Horns!” And around here, we say that a lot. And we say it loud and proud.
While I waiting for the delivery to arrive, I started thinking more and more about what to do with these molds. I knew that four (4) packages of Jell-O were included with the two molds, but there’s more to life than just Jell-O. There’s pudding. And there are pudding pies. But sit tight. We need to talk about the Jell-O first.
Following the package instructions for the Jell-O, I {attempted} to create burnt orange. What do you think? Too orange-y, not enough burnt?
But then came the good stuff. I whipped up a batch of vanilla pudding – the Jell-O brand makes pudding, too, but you can use your favorite homemade recipe. I tinted the vanilla a lovely shade of burnt orange by mixing in a few drops of yellow, red, and blue food coloring. Using a small spoon, I added the burnt orange pudding to the Jell-O University of Texas molds. Then popped them in the freezer for an hour.
Meanwhile, I made a batch of chocolate pudding. Is that not the best thing ever? I mean come on, who doesn’t like chocolate pudding? I exercised a great deal of willpower by not eating the entire bowl of chocolate pudding. Instead, I added the chocolate pudding to individual graham cracker crusts. I made sure to divide it equally among the six crusts. You don’t want to hear “he has more than I do!” Trust me.
Top your pudding filled pie crusts with your favorite whipped topping and place a frozen University Jell-O mold on top.
They were so good, my favorite Texan had one for breakfast.
