Last week was another menu plan failure. The weather was hot and sticky, and I was lazy and busy. I’m trying to keep this week’s meal plan easy, and use the ingredients that we didn’t eat last week. Here’s what I’ve come up with:
Monday: Pasta Primavera
Tuesday: Turkey Tacos (missed last week)
Wednesday: Grilled Chicken, Sweet Potatoes and Corn on the Cob
Thursday: Leftover Feast
Friday: Grilled Seafood and Vegetables
Saturday: Date night – dinner out
Sunday: Summer concert on the lawn, we’ll need to bring a picnic. Any ideas for tasty picnic fare?

Picnic food could include nuts, berries, cut up veggies, homemade salsa/guac/humus with pita pieces/chips/veggies! Maybe a veggie sandwich! Sorry I am vegan so I am not mentioning meat….but you could have some sort of meat sandwich as well! Happy monday and meal planning! Have fun at your little picnic!

Thanks for stopping by and also for the great suggestions, Stephanie. I prefer vegetarian meals, but I married a Texan and he’s all about meats. I’ll be packing up some of your suggestions – like the salsa and guac! Two of my favorites and I rarely think of them for picnics!

Ooh what kind of seafood are you going to have? My daughter’s been obsessed with showing me scallops and lobster in her animal book so those immediately come to mind!

We’ll probably have scallops as our fish market always has them at a fair price. If not, we’ll go with Tuna. Fresh tuna on the grill is my favorite, especially if you can find it caught the same day. Of course, lobsters are good too. We only eat those outside – too stinky and messy – so they’re better for the weekend when The Texan is home at a reasonable hour.
