I’m really on the ball lately with my menu planning…and sticking to it! Last week, we strayed once because of a last minute invite to a backyard BBQ. We had a night of leftovers and one “fend for yourself” night, simply because I was too darn lazy to cook.
Yesterday, we had the pizza that was supposed to be Calzones on Thursday night. That means no roasted chicken leftovers for Monday. Our weather has been unseasonably WARM the last few days. And that’s been great, but my taste buds are craving fall foods. It’s weird to drink pumpkin spiced coffee when temps are in the mid-seventies.
Monday: Chicken Enchiladas {another meal skipped last week}
Tuesday: Spicy Stir-Fry {not sure if we’ll do chicken or shrimp or scallops}
Wednesday: Turkey Reubens
Thursday: Crock Pot Surprise {I’m going to use the Crock Pot, but haven’t decided what I’m going to make yet.}
Friday: Homemade Pizza
Saturday: Leftovers or Lasagna
Sunday: Roasted Chicken
Despite my meal planning efforts, I’m in a food rut. I feel like we’ve been eating the same ol’ same ol’….so, I reserve the right to change up our menu plan on a whim this week. It might be time to dig out the magazines and try some new recipes. And, I’m going to head over to I’m an Organizing Junkie to check out what everyone else is eating.
What have you done to get out of your food rut?
What kind of homemade pizza are you going to make? Making my own pizza ends up tasting better than delivery and is way healthier/fresher.
We’ll either have buffalo chicken or pesto-chicken-onion-tomato or kitchen sink pizza, which is just a hodgepodge of ingredients. I like spinach, onion, and green peppers, but The Texan likes some kind of protein on his. Lately, I’ve been making two smaller ones and everyone is happy.

That’s a great idea, but the food I check out on Pinterest is usually desserts! Perhaps I should broaden my pinning a bit!
I have a small 1″ binder that I keep all my magazine cut-outs in. It’s my own version of an easy to make cookbook. I’ve featured some of them on my site. One thing a girlfriend of mine suggested was breakfast for dinner at least one night a week. It could be cereal or it could be omelettes. My family loves it!
