Every week, I sit down and craft a menu plan for my family. Most of the time, we stick to it. Especially when our weeks are busy and there is no time to stray from our plan. This week is a week like that. Taking a few minutes to decide ahead of time what we’re going to eat, makes the rest of my week run much smoother.
Monday: Chicken Ziti and Broccoli. Last weekend, we ordered carry out from a local Italian restaurant. I chose their Chicken Ziti and Broccoli and haven’t stopped thinking about it since. Tonight, I’m going to create a lighter, healthier version. Watch for the recipe soon!
Tuesday: Burrito Bowls. While I love the alliteration of Taco Tuesday, it gets boring. This week, we’re having burrito bowls instead. I actually prefer them as I make them with brown rice, black beans, and a slightly-spicy ground turkey.
Wednesday: Lasagna. Yes, on a weekday, I’m making a lasagna. Sadly, there aren’t any in the freezer. Lasagna is one of my favorite meals. I always start with this vegetarian lasagna as my base recipe and sometimes kick things up using chicken sausage. I’ve mentioned it before, but The Texan swears it isn’t a meal if it there isn’t some type of meat.
Thursday: Leftovers. I’ll make a fresh salad, but we’ll be eating leftover lasagna on Thursday. Besides, everyone knows that lasagna tastes better the second time around. Amirite?!
Friday: Pizza. Some traditions cannot be altered. Friday nights are pizza nights in our house.
Saturday: College football is more fun to watch while you’re eating Chicken Wings. Since we’re not having Wings on Wednesday, I’m going to make them on Saturday. And maybe some homemade french fries, too.
Sunday: If the weather forecast holds, we’re having a pot of chili. I’m not ready to admit that it is time to start cooking comfort foods. Especially as I sit with my air conditioner running.
