I confess…last week’s menu plan was a failure. In case you’re monitoring, that is two consecutive weeks that I haven’t made what I set out to make.
Friday it was TOO HOT to grill – or cook anything for that matter. We were having a heat wave of sorts, unusual for our area as we typically have a nice sea breeze from Nantucket Sound. Instead of grilling on Friday night, we scrounged for leftovers in the fridge. That was after The Texan spent nearly an hour moving our dehumidifier/portable air conditioner from the basement to our living room. (We don’t have central air, and don’t generally need air conditioning. Instead, we have two tacky window units and one portable thing that also doubles as a dehumidifier which we run in our basement during the warmer months.)
And remember that Saturday night was supposed to be date night?? I was so excited as Crystal Bowersox {from American Idol fame} was scheduled to perform at the local county fair {no, we’re not hillbillies} – they canceled the show due to storms. It saved us the $20 in admission, and the boring 45 minute drive, too. But canceled date night. Instead, The Texan grilled up some chicken and I whipped together a quick salad and some tortellini. We did eat dinner outside, I guess it was sort of like a date night after all.
This week, I’m going to TRY to stick to making the following:
Monday: Tortellini Salad {with grilled chicken for The Texan}
Tuesday: Grilled cheese and tomato sandwiches with garden salad
Wednesday: Grilled Shrimp Fajitas with Sarah’s Salsa
Thursday: Fettuccine Chicken Florentine
Friday: Thai Chicken Salad wraps
Saturday: Steamed lobster with corn on the cob {I’m not making this, we buy our lobsters steamed from our local fish market. They do a great job – and it keeps the “stink” out of the house!}
Sunday: Picnic in the park

I’m always so jealous of your fresh seafood! Don’t feel bad, I never follow a meal plan exactly as I plan either. You skipped one grilling night and just swapped it for another – bummer about date night though. Hopefully you’ll get a makeup date this week!
