Another week in the books! Can you believe how quickly this year is flying by? I feel like it was only yesterday when we ushered in the new year. We’re sitting at week 34. That’s 34 weeks of menu planning. Yowzers! Okay, so I missed a few weeks and my waistline and wallet suffered for it. But I’m focused and dedicated. Having a menu plan makes mealtime much easier, and keeps your budget on track.
Rugby season is in full swing and The Texan is busy two nights a week through October and there are matches on the weekend. Having a consistent menu plan is super important for us this time of year.
Monday – Rugby night. We’re having homemade chicken soup using the leftover chicken and {homemade} stock from the crockpot chicken I cooked on Saturday.
Tuesday – Grilled steak and fish with broccoli slaw. I making the broccoli slaw the morning you’re going to eat it is best. Any sooner and it is too soggy, and later and it is too crunchy.
Wednesday – Lobster. Because Lobster on Wednesday is yummy. Lobster prices are unbelievably low this year due to the warmer ocean temperatures and the overfishing of cod (a natural predator to lobsters). It’s a sad reality, but we have been enjoying lobster more often because of the lower price point.
Thursday – Rugby night means Turkey Tacos! On rugby nights, if I decide to cook, I like to prepare meals that The Texan and I can enjoy at different times, but will still taste great to both of us.
Friday – I desperately want pizza, but don’t want the calories and fat that come from delivery pizza. We used to make our own pizzas before The Boy was born, I think we’ll try that again.
Saturday – Did you know that Saturday is the first Saturday of the College Football season? That calls for wings, artichoke and spinach dip, and the best cole slaw ever!
Sunday – Grilled Pesto Chicken and Tomatoes with Sweet Potato fries
