Eating Well.
What does that mean to you?
For me, eating well mean having a well-balanced diet full of delicious, healthy foods you love and delicious, not-so-healthy foods that you crave.
We did well sticking to our menu plan last week. The chicken scampi we enjoyed for dinner on Thursday was amazing. A bonus to making chicken scampi for dinner is that there was plenty for lunch the next day! I want to make it again this week, but I’m going to hold off for a bit!
This week, we’re going to grill more and really savor the flavors of summer. When grilling proteins, I like to season them with a simple pink Himalayan sea salt and cracked pepper blend. These flavors enhance the food without over powering them.
Monday: Grilled chicken and tomato/basil/mozzarella salad.
Tuesday: Grilled steak and scallops with a garden salad.
Wednesday: Grilled Shrimp over mixed greens.
Thursday: Deconstructed Burritos with homemade guacamole. Yep, the same as a Burrito Bowl, but changing up the name a bit!
Friday: Grilled flatbread pizza. The last time we tried grilling a pizza, it burned and we ended up dining out. Fingers crossed we’ve improved since then!
Saturday: Dinner at the beach
Sunday: Sandwiches after a long day at the beach.
Last week wasn’t perfect, I did whip up a batch of my delicious chocolate chip cookies for our day at the beach. However, I ran into a snafu midway through the process: no chocolate chips. Instead, I tossed in white chocolate chips, chopped dark chocolate, dried cranberries, sliced almonds, and chopped pecans. That batch of cookies might be the best batch of cookies I’ve ever made. Sorry, we didn’t save you one!
