Here we are. September 1. The summer flew by, just like it always does. Tomorrow, The Boy starts Kindergarten. GAH! How can that be happening? This week is going to bring on a BUNCH of changes for our family. We’re getting The Boy on schedule and The Texan kicks off his new college rugby coaching position (so proud!!).
Good-bye lazy days of summer when we sleep until 8.

How are we going to manage the craziness of an everyday school schedule?! One way to tackle it is through creating a menu plan. As the days get shorter, it becomes easier to have dinner ready at a more reasonable hour, especially when the menu is planned and ready to go! Taking time to menu plan also allows you to adjust for the nights when things are busier for your family. The Texan has rugby on Tuesday and Thursday; so I’ll keep dinner simple but still tasty.
Monday: Grilled chicken, corn on the cob, and cranberry-almond brown rice.
Tuesday: Turkey Tacos
Wednesday: Roasted Chicken with mashed potatoes and asparagus
Thursday: Chicken Quesadillas {or Nachos}
Friday: Homemade pizza
Saturday: Chicken wings
Sunday: Orzo with chicken, caramelized onions, spinach, and feta
While The Boy is at school tomorrow, I think I’ll make him some Peanut Butter S’mores Brownie Bars to celebrate!
