Vacation has a way of derailing your healthy eating habits and wrecking havoc on a menu plan. And you know what? You shouldn’t dwell on it. Vacation is a time to do things you don’t normally do, to relax, kick back, and have a blast. While we were on our road trip, we did just that. Sadly, I now feel gross and cannot stop shoveling the crap into my mouth.
So, it’s time for a change.
I’ve decided to sign up to run the Celebration Marathon in January. Somehow, I convinced The Texan that he wanted to run it, too. Part of training for a marathon is to eat healthy; you can’t fuel your body on vacation foods. Going forward, we’ll be eating things like this:
Monday: It’s Cinco de Mayo! For me, this is the unofficial kick off to the Margarita season! Tonight, we’re having grilled chicken wraps. Maybe I’ll add salsa to mine for a little Mexican kick.
Tuesday: Grilled Chicken and Vegetables
Wednesday: Turkey Burgers and Sweet Potato fries
Thursday: Burrito Bowls with ground turkey breast. I really love Mexican foods, you’re able to create a lot of flavor without a lot of calories!
Friday: Grilled Scallops with cole slaw
Saturday: Tapas night! My mom is visiting for the weekend. Saturday night’s menu will be full of easy to make {and easy to eat} tapas. I’d better get to work on some recipes!
Sunday: Mother’s Day. Don’t care what we have, but I’m not cooking it!
I’ll certain miss Buffalo Chicken Pizza and other comfort foods; but here’s to hoping the warm weather will curb the cravings!
