Today is April 1st. This morning it snowed. Not a funny April Fool’s Day joke from Mother Nature. Not funny at all. Anyhow, enough of my complaining about the looonnngggg winter that just won’t quit! This week’s menu plan has a few holdovers from last week because the heating element in our oven broke.
Such a bummer not having too cook, right?

Now that we have a super efficient working oven, we’re eating like champs! Don’t worry though, I promise we did not starve. The oven broke at just the right time – we went to the Big Apple Circus on Saturday night and then braved a birthday party at Chuck E. Cheese on Sunday. It’s hard to worry about making meals when you’re really on the go. On the car ride home late Sunday, The Texan commented that our weekends are going to soon be all “go go go” again. As The Boy gets older, we’ll be busy, busy, busy. When we lived in Florida, The Texan and I were on the go every weekend. Of course, the gorgeous Florida weather makes it easy to go go go. I miss that.
Ok, now on to what you’re here for! What’s on our menu plan:
Monday – Sandwiches {I had a grilled caramelized onions, spinach and mozzarella sammie. Yes, it was delicious.}
Tuesday – Chicken breast with caramelized onions and goat cheese; served with green beans.
Wednesday – Chicken Caesar Salads, hold over from last week.
Thursday – Turkey Tacos
Friday – Homemade pizza with chicken, caramelized onions, and ricotta. Yum. I wish today was Friday.
Saturday – Lasagna. Remember, when you make lasagna, make and and freeze a second pan for another meal! It’s super easy to double the recipe!
Sunday – Leftovers? Sandwiches? Cereal? Who knows!
I plan to do some baking this week. I’m going to whip up a batch of the best chocolate chip cookies {freezing half for another day!} and maybe some Oatmeal Carrot Raisin muffins, too.
