Friends! We did it! We survived the first week of school. Tears came on Friday afternoon when The Boy learned that he would have to stay home for TWO WHOLE DAYS before returning to the classroom today.
Not only did we make it through school, we also did a decent job of sticking to our menu plan. The Texan was out on Friday night for rugby, which pushed our pizza night to Sunday. You’re probably wondering what we had instead? The Boy had his favorite – an Applegate all-beef hot dog (it doesn’t have an funky stuff inside) and I caramelized onions, sautéed some spinach, and added it to linguine. Oh, and some fresh mozzarella.
This week is packed full of everything that is busy! From rugby to school open house, it doesn’t seem there is a night for us to relax! I’ve got easy meals in mind.
Monday: Orzo with chicken, caramelized onions, spinach, and feta
Tuesday: Baked chicken with asparagus and mac & cheese
Wednesday: Risotto with Sea Scallops
Thursday: Turkey Reubens with sweet potato fries
Friday: Leftover Risotto (I’ll make fresh scallops, shrimp, or chicken as the protein source)
Saturday: Chicken wings and tater tots (FYI…the Tater Tots from Whole Foods Market are super delicious, they bake up far more crispy than the only from Trader Joe’s.)
Sunday: Hopeful for dinner at the beach, but it is a school night…so maybe sandwiches after a long day in the sun?
