Although my calendar tells me that it is April and spring is here, Mother Nature seems to think it’s still early March. With our temperatures well below the seasonal average on Cape Cod, it’s been hard to get into the mood. I’m hoping that this delicious Wild Rice Salad with Tyson Crispy Breast Fillets and Lipton Iced Tea brewed with fresh peaches will get me in the spirit! Warm weather, where are you?!
I recently took a trip to Walmart to gather the ingredients that I didn’t already have on hand. {You can see more about my shopping adventure in my Google+ album.} Generally, when I think of Crispy Breast Fillets, I automatically want to smother it in hot sauce. And garlic. This time, I fought the urge and went with something lighter and more seasonally appropriate!
The directions on the package of Tyson Crispy Breast Fillets said to cook it for 18 – 20 minutes at 350 degrees. Easy peasy! While the chicken was cooking, I started a pot of water to boil for my Lipton iced tea and sliced the peaches.
Once the water boiled, I added the Lipton Iced Tea bags and the sliced peaches. At the same time.
While the Iced Tea bags were steeping, I gathered the balsamic vinegar, honey, dried cranberries, a bag of spinach, chopped a handful of pecans, and reheated the leftover wild rice. I love fresh baby spinach as the basis for a salad. It’s rich in vitamins and nutrients. For you vegetable naysayers out there, fresh baby spinach doesn’t have much of a taste; give it a try one day. You’ll love it. Before I lined my plate with spinach, I removed the tea bags from the pot. Leaving them in longer than 4 – 5 minutes can cause a bitter aftertaste. No one likes that. Be sure to leave the peaches in, you really want the flavor to pop! Also, if you add sweetener to your tea, this is a great time to add it. We drink ours unsweetened. {Isn’t that crazy, considering The Texan is from Texas and most people there drink their tea sweetened.}
Let’s get back to this fabulous salad. We need to get it together quickly! To a bowl, I added the leftover wild rice, chopped pecans, dried cranberries, a few glugs of balsamic vinegar and a squeeze or two of honey. I mixed these together well using my {clean} hands, I really wanted to combine the flavors together. In hindsight, I should have whipped this all together before I stored the rice away the first time. Sitting overnight would have given the flavors a chance to combine. Flavors tend to come alive after hanging around with one another for a while.
As the oven timer was going off, I added the wild rice mixture to the spinach. Again, it looked beautiful. I couldn’t wait to get it in my mouth! I sliced the chicken using a diagonal cut, this lends to a gorgeous presentation. Be sure to use a very sharp knife when you’re cutting breaded items, the breading has a better chance of staying put! Once I had my chicken sliced, I added it to the top of the wild rice mixture. I poured a glass of the delicious peach Iced Tea and sat down to a peaceful lunch.

Ingredients
- 1 Tyson Crispy Chicken Breast Fillets
- 2 cups Baby Spinach
- 1/2 cup Wild Rice (leftover is great, or freshly prepared)
- 1 TBSP Balsamic Vinegar
- 1 TBSP Honey
- 1 TBSP Chopped Pecans
- 1 TBSP Dried Cranberries
Instructions
- Cook chicken according to package instructions.
- Add baby spinach to plate.
- In a bowl, mix remaining ingredients together.
- Top spinach with rice mixture.
- Slice chicken on the diagonal and place on top of the rice mixture.
- Enjoy!
Notes
Tip: Using leftover rice will save time. If you have leftover rice, consider preparing the rice mixture the night before you plan to eat it. This will allow the flavors to develop.
If you don't have wild rice, brown rice is an excellent substitute.

- Sliced peaches
- water
Instructions
- In large pot on stove, boil water. Add Lipton Iced Tea bags, sliced peaches and turn heat off.
- Allow tea bags to steep up to 5 minutes.
- When cool, pour into pitcher and refrigerate.

What I loved about the chicken was the breaking staying put! Tyson did a great job creating this product. The meal came together quickly, it’s perfect for lunch or dinner.
The salad looks great and that tea looks amazing! It’s already warm here in Texas so this looks like a great easy family dinner this time of year for us!
