I’ll be making two separate meals EVERY flipping NIGHT of the week because I am not Atkins diet material. And because I’ve decided that I’m going vegan. Or at least, I’m going to try to. I was a vegetarian for years, but over the years have added certain animal products back into my diet. Like Ben & Jerry’s Cherry Garcia and Jamaican Grilled Chicken Wings. Recently, I’ve added Trader Joe’s Soy Essential Drink, a few Litelife Products, and tofu to my grocery list.
I’m sort of excited about our new meal plans as they follow into our 2011 theme, which you may remember is Health. And, I haven’t really focused on our theme lately. Psyched to {finally} get to work on it!
