Yes, I know. Last week’s post was titled week 3 – because it was the third week that I posted our menu plan. However, it was actually the seventh week of the year. Everything else in my life is organized by the week, so I need to change things up a bit for the Menu Plan Monday titles. This week is calendar week 8, but only the fourth menu plan I’m sharing. Make sense? Great!
We did a fairly good job of sticking to last week’s menu plan. We loved the Clean Eating Magazine’s recipe for Oven Baked Crispy Chicken. I changed up the ingredients a bit because I wanted it to have a spicier flavor. I loved how easy the recipe was to follow. You should check it out!
This week, we don’t have many activities planned which means more time for meal prep! Here’s our menu plan:
Monday – YOYO (Your On Your Own) – this will translate to steak for The Texan while The Boy and I have breakfast for dinner!
Tuesday – Herb-Marinated Chicken with marbled mashed potatoes
Wednesday – Homemade Chinese “take out”
Thursday – Turkey Tacos or Turkey Chili
Friday – Scallops Mascarpone or another seafood dish
Saturday – Pizza and salad
Sunday – Jamaican Chicken Wings with Artichoke and Spinach Dip

One of my favorites for Chinese is Oh My Veggies Baked Fried Brown Rice. It is delicious and so easy to make. General Tso’s Chicken is a great main course – I like this recipe from Emeril, but I skip the egg & cornstarch.

I may have to add that spinach artichoke dip to my list of things to make. I have bought the frozen version at Trader Joe’s but I may have to try homemade. By the way, I love Cape Cod. We were there in 2006 when my oldest was just 2. So jealous that you live there all the time!
The Trader Joe’s frozen is good in a pinch, but making it yourself is so much better!

This week I actually tried the beef tips in gravy… loved it and plan on making it my own soon. Thanks for the meal planning… I really plan on doing this then never get everything down and end up coming home to having nothing planned.
Isn’t it great to try new recipes? There are several that I want to try, I need to do a better job of organizing my “try someday” pile of recipes!

Ooooh the homemade Chinese sounds good! I’m making something like that this week too – Mongolian Steak. I’m allergic to soy, so I can’t get actual take-out. This is the next best thing, plus making it at home is a lot more healthy!
Eating at home is much healthier on your waist and your wallet! I find that ordering Chinese in a restaurant tends to be too salty for me! It’s also less embarrassing to eat with chop sticks at home!
