I’m taking a break from how I typically menu plan, and am writing this from the comfort of my adirondak chair in our backyard. It’s so nice to welcome spring after such a long, cold winter.
Because I want to enjoy as much of the outdoors as I can, I’m going to cut to the chase and give you our menu plan right away. No more unnecessary rambling.
Monday – YOYO {rugby night, so You’re On Your Own for dinner}
Tuesday – Grilled Shrimp Skewers with roasted veggies
Wednesday – Marinated Chicken Breast with mashed cauliflower and broccoli slaw
Thursday – YOYO {rugby night!}
Friday – Fajitas
Saturday – Burgers and onion rings
Sunday – Oven Roasted Whole Chicken
Yum! Just reading my menu plan is making me hungry. Happy that Lobster Rolls await me for lunch today!

I’m so happy that it’s grilling weather again – you know, where you don’t have to stand outside in a winter coat to cook a meal! Hooray spring! It’s great to incorporate lighter meals, too. We’ve been doing lots of fish, lately. Summer is just around the corner, right?!
The shrimp sounds great! And I also love mashed cauliflower!
I was so disappointed – when I went to the market to pick up shrimp, they didn’t have any large. We ended up having Mahi Mahi instead, it was delicious though!
