Last week’s menu plan ended up being easier than I anticipated. The events in Boston last week also slowed our menu plan down a bit. The mood has been quite somber, but as I wrote last week, It’s not the world, it’s the outliers. We tried to keep things as normal as possible around here, and when we were invited to a friends’ house on Friday evening, we jumped at the chance. It was wonderful to spend time with some close friends and reconnect over a great meal, good wine, and some whiskey!
Because I was thrilled to not have to cook dinner, I decided to whip up some of my soon-to-be-famous Easy Artichoke and Spinach dip. I used ghost peppers instead of red pepper flakes this time and it was out of this world delicious!
Here’s this week’s menu plan:
Monday – YOYO {rugby night, so “you’re on your own”}
Tuesday – Paleo Chicken Pad Thai
Wednesday – Dinner guests tonight – grass fed steaks, shrimp, and chicken on the grill {fingers crossed it isn’t raining!}
Thursday – YOYO {rugby, again?!}
Friday – Paleo Crab Cakes {We enjoyed these so much last week, I’m putting them on the menu again!}
Saturday – Rugby Day! The Texan and his crazy, wild Cape Cod Rugby teammates are headed to Boston for a match. Generally we have wings or another meal that easy to put together after a busy, fun day!
Sunday – Paleo Chicken Pot Pie

Thanks for visiting Andrea. I’ve struggled to create Paleo meals too, but am happy to find some that are easy to prepare and taste great. The last few times my husband has tried Paleo 100%, we’ve struggled to find good meals that offered flavor variety.
