Today is your lucky day! I’m sharing one of my favorite recipes with you as part of the 30 Days About Me series that Toni is hosting on her blog.
I love to spend time in the kitchen cooking – and I’m working on my baking skills, too. Cooking can be relaxing and rewarding – especially if you have someone on clean up duty! But, heating up the kitchen on a warm summer night is no fun. One of my favorite meals to prepare is a Simple Grilled Fish with a Caprese Salad. It’s healthy and light, perfect for warm summer nights dining al fresco in your back yard.
Ingredient List:
One pound of mild white fish, such as Haddock, Mahi Mahi, Swordfish or Sea Bass are great choices
Two medium sized tomatoes, preferable fresh from the garden {or your neighbor’s…that’s where I get mine!}
One medium sized ball of Fresh Mozzarella
Fresh basil
Freshly ground salt and pepper
Extra-virgin Olive Oil
Lemon slices
How to Prepare:
Season fish with salt and pepper, grill for 3-4 minutes per side.
While your fish is cooking, thinly slice your tomatoes, Fresh Mozzarella, and basil. On a serving plate, alternate the Fresh Mozzarella with tomatoes and basil slices. Drizzle with olive oil and freshly ground salt and pepper.
Remove fish from grill, garnish with lemon slices. Serve with Caprese Salad.
Serves two adults and one toddler.

i LOVE, LOVE, LOVE caprese salad! and amazingly enough even my kids like white fish! so i’m going to give this one a try…thanks for sharing :]
