The Texan just called to me from the den “What are we having for dinner tonight?” EEK! It’s Monday already. Either he was hungry and curious, or was reading the blog and noticed there was no menu plan for this week. Whatever the case may be, I knew that it meant I needed to think about what we were going to eat!
Last night, I placed our weekly PeaPod Delivery order with an idea of what we’ll eat this week. I chose a later delivery time to save a few dollars off the order. That means I had to get a little creative with what we’re having tonight. Since no one called to say they were bringing us a chicken pot pie or freshly caught tuna {it’s not tuna season, so that would be impossible!}, I need to come up with something quick!
Monday – Chicken Wings and Sweet Potato Fries. A simple meal – and really the only thing I have all of the ingredients to prepare!
Tuesday – Scallop Risotto with mushrooms and onions. Yes, this recipe is as good as it sounds.
Wednesday – Lasagna. These lasagna rolls were a big hit for a while, but I’m working on a new recipe with chicken sausage. I think you’ll like it. I hope to post the recipe later this week. If I do, I will update this post with a link!
Thursday – Leftover Lasagna.
Friday – Homemade pizza: chicken, caramelized onions, spinach, diced tomato, and pesto sauce.
Saturday – Baked chicken with orzo, spinach, and feta cheese.
Sunday – Leftovers or Homemade Chicken Pot Pie.
For a treat this week, The Boy and I are going to make the best chocolate chip cookies. They really are, try my recipe – you won’t be disappointed.

I’ve fallen off the wagon with menu planning and I need to get back on because our budget is getting eaten up with all of the dining out lately.
Every time I fall off the menu planning wagon, my waistline takes a hit too! Sticking to our menu plan isn’t always fun; there are plenty of nights when I really want to order take out, but I force myself to cook and feel better for doing so!
