My first true encounter with avocados from Mexico was during my first job in the restaurant industry. I worked at this {super} busy sandwich shop that made {super} tasty rolled-up sandwiches. This was before it was trendy and hip to eat a wrap as they’re now called. We called them Rollwhiches, and I’m sure that term is trademarked or copyrighted by them too. Before you run off to google that, please listen to the rest of my story.
This first job of mine, I had to split open, remove the pit, peel and slice about 100 avocados a day. I did that for about three days. Just when I thought I was going to quit or go crazy, I was assigned a new task – which was equally tedious, if you’re wondering. For a long time after that, I couldn’t stand to split, pit, peel and slice these tasty treats. But time as passed, and I’ve gotten back into the split, pit, peel and slice routine.
Mexican avocados are available year round for us to enjoy because of the rich volcanic soil in which they’re grown. In Mexico, avocados bloom naturally four times a year. Isn’t that amazing? I am sure that’s why avocados from Mexico are so creamy and tasty. Avocados are great foods for picnics, burgers, backyard BBQ’s and Halloween, too!
You see, each Halloween my mother hosts a super fun costume party. Everyone dresses up and eats wonderful food. I’ve had a pass the last few years on contributing – having a new baby gets you out of that! – but I’m guessing my number is up this year. I have a few recipes in mind, like this easy Guacamole Recipe with a hint of lemon. Call it Spookamole if you’re serving it on Halloween.
What you’ll need:
1 Hass Avocado – split, pit, peel and squish
1 small Jalapeno – diced, with or without seeds and membranes
1/2 tomato – diced
1/2 small onion – diced
1 clove garlic – minced
2 tsp fresh lemon juice
Salt and Pepper to taste
What you’ll do:
Place all ingredients in bowl. GENTLY mix with fork until ingredients are just combined.
Serve with your favorite tortilla chips, top on a cheesy quesadilla or chicken tostada. This would also be great on a turkey burger, tacos, or even an omelet!
