Are you getting ready for the big game? In our home, every game is a big game! It’s true what they say that every game counts, but during the month of January doesn’t it seem as if those games count even more?! If you’re like me, you don’t want to spend a lot of time in the kitchen and miss out on a big play. That’s where this amazing cranberry feta dip comes into play.
I grabbed everything I needed to make my favorite cranberry feta dip on a recent trip to my neighborhood Walmart. While I was there, I spotted the perfect big game party essentials: DiGiorno® Pepperoni Stuffed Crust® Pizza, half liter bottles of Coca-Cola classic, and Ritz Crackers.
Ritz Crackers are the perfect companion to cranberry feta dip. The rich, buttery flavor combined with this dip will score big points with your tastebuds. Your big game party guests will be begging you for the recipe, trust me!
To the bowl of a stand mixer, whip the cream cheese until it is light and fluffy. You want it to look like frosting. Be patient, this process can take up to five minutes.
See the beautiful peaks. That’s what you’re looking for!
Add crumbled feta cheese being careful not to over mix. It should be slightly lumpy.
Add cranberries, scallions, and honey. Mixing until well combined.
Recipe variation: If you like walnuts, now is a GREAT time to add them! I didn’t use them this time because of food sensitivities. Spoon into glass bowl, garnish with chopped scallions and dried cranberries.
This recipe is best when prepared at least an hour before game time. I like to make mine the morning of the big game. If you’re like me and often forget to take the cream cheese out of the refrigerator, you can quickly soften it by placing in the microwave on high in 10 to 20 second intervals.
Ingredients
- 8 ounces of cream cheese
- 3 TBSP crumbled feta cheese
- 1 TSP honey
- 1/3 cup chopped scallions {about 3 scallions}
- 1/4 cup dried cranberries
- Ritz Crackers for serving
Instructions
- In the bowl of your stand mixer, whip cream cheese until light and fluffy.
- Add crumbled feta cheese and mix to combine.
- Mix in honey, scallions, and cranberries using a rubber spatula.
- Refrigerator at least one hour before serving.
Notes
This recipe is also delicious with finely chopped walnuts or pecans. Add them with the other mix-ins.
If you don't polish off all of the dip, it makes a wonderful spread for a turkey sandwich!
There is something so simple and refreshing about serving appetizers that taste delicious without having to spend so much time in the kitchen. Having more time to spend with family and friends enjoying the game is something that I cherish.
Serving Ritz crackers with my cranberry feta dip and DiGiorno® Pepperoni STUFFED CRUST® Pizza at your game-day party is a time saver. Baking these pizzas at home in your oven while the big game is on won’t leave you wondering where the delivery man is! With real mozzarella cheese and California vine-ripened tomatoes, you’ll be a winner when you grab these pizzas on Rollback at Walmart today!
Don’t leave your guests parched or without a dessert. Serve these fun Coca-Cola floats!
The night before the big game, pre-scoop your ice cream! {Don’t run down the game clock, plan ahead!} Choose the flavors you like, there is nothing worse than leftover ice cream in a flavor you don’t like. Use a muffin pan and make nice round scoops with your scooper. It’s important to work quickly so your ice cream won’t melt into the bottom of the muffin pan.
At serving time, bring your pre-scooped ice cream out and pop ’em into waiting mason jars. You know it isn’t a party without mason jars!
Top with Coca-Cola Classic and a straw. If you want to be really fancy, garnish with whipped cream and jimmies {or sprinkles, depending on which side of the country the team you’re rooting for is on!}.
No matter who you’re rooting for, you won’t get a penalty flag for serving these game day recipes. What will you be serving at your big game party? Lucky enough to be a party guest, tell me about the hostess gift you’re bringing!
I love the idea of the scoops of ice cream in the muffin tins. Brilliant! We’ll be spending the big game with family and friends, eating lots of finger foods.
