Winter is 89 days long. In that time period, I will have shoveled at least 60 inches of snow, broken at least one shovel, sprinkled two bags on ice melt on our walkway, made two igloos and countless snow angels. It’s been a long, cold winter so far and so full of fun. We’ve had five days of school canceled because of the weather. Snow days often translate into baking days. Who doesn’t like a sweet treat after sledding, shoveling, and snow building?
My go to treat is chocolate chip cookies, they’re so easy to make and please everyone. But, you can only eat so many! While shopping at Walmart a few weeks ago, I noticed that M&M’s® Crispy are back and decided they would be the perfect mix-in for blondies.
You’ll find the larger size bags of M&M’s® Crispy in a free standing display toward the front of the store, or in the candy and baking aisle at Walmart. I also spied the the individual snack size bags of M&M’s® Crispy that contain only 180 calories per serving near the check out, too.
Blondies are a bar cookie. They take less time to make than cookies because you bake them in one batch for 20 -25 minutes. They’re similar to brownies, too – yet no cocoa powder in the mix. If you’ve never tried them, you’ll love these! Perfect combination of brownies and cookies.
Preheat your oven to 350 and grease a 9X13 pan using non-stick cooking spray or butter. I like to use the paper wrapper from the butter stick to grease my pan. While the oven is preheating, melt one stick of butter. I like to use unsalted butter when baking. If you only have salted butter on hand, just omit the additional salt. No need to make a special trip to the store!
Combine the melted butter with 3/4 cup of brown sugar in the bowl of your stand mixer. Beat until smooth – you don’t want to see any sugar granules.
Add in two eggs and two teaspoons of high-quality vanilla extract.
Slowly add salt and flour.
Once the flour is well combined, stir in one cup of M&M’s® Crispy.
Pour into the prepared pan. Use an off-set knife or rubber spatula to spread the batter out in the pan.
Bake for 22 minutes until set in the middle. Cool on rack before cutting. Tip: Cut with your pizza knife!
