We had the most wonderful Thanksgiving week, and I hope that you did as well. We’re fortunate that The Boy had the entire week off from school. I loved the time we had to reconnect, taking a break from our routine, and to just be together. Now that we’re back to into the swing of things, I wish that we had taken some time to work in the kitchen together. Making this easy holiday truffle recipe is one of my favorite activities of the holiday season. I was so busy getting ready for the first BIG holiday event, that I didn’t make time for us to do that.

That isn’t going to happen to me again. I’m going to put my party planning skills to the test. Wouldn’t it be great if we always took our own advice? Often, I share advice with friends about how to do this or that, but when faced with the same task myself, I do it another way.
How silly, right?
Everyone has parties and events to plan this time of year, so let’s chat about the best ways to plan a party to ensure you’re not missing out on valuable family time. Kids grow up so quickly, missing a minute of fun is one too many for me.
Party Planning Tips
1| Choose a date. Pick a date that works best for you.
2| Invite the guests. There are several online invitation sites available, use email, traditional paper invitations, or even use the telephone!
3| Don’t buy decorations. Use what you have. Repurpose items from other places in your home to change things up.
4| Plan the menu. Hosting a party doesn’t have to be a huge expense. Think of meals that will serve a crowd like chili or lasagna, and for a more affordable option, have a coffee and dessert party.
Now that we’re on the topic of coffee and desserts, I thought it would be fun to share a holiday truffle recipe with you. This recipe is so easy, you could make it during nap time without waking your little ones.
Easy Truffle Recipe
Truffles sound fancy, don’t they? I think that’s because of the mushroom they share their name with. Those truffles are fancy and pricey, these…not so pricey but very tasty!
What You’ll Need
16oz. Baker’s Semi-Sweet Chocolate Squares (4 packages)
8oz. Philadelphia Cream Cheese, Softened (1 package)
Planter’s Peanuts and Baker’s Coconut for decorations
Peppermint or Rum Flavoring (optional)
What You’ll Do
In a microwave-safe jar, melt half of the chocolate squares on high power making sure to stir at 30-second intervals.
Add the softened cream cheese to the bowl of your stand mixer. Beat until creamy. Then beat some more.
Slowly add the melted chocolate, mixed until well combined. {This is where you’d add your optional flavoring.}
Scrape the sides of the bowl and refrigerate until firm. About 10 minutes.
Line a baking sheet with parchment or wax paper.
Remove cream cheese mixture from the refrigerator and begin shaping into balls. Place a small amount in the palm of your hand, and gently roll the mixture into a ball. Repeat until no cream cheese mixture remains in the bowl. Refrigerate until firm.
Melt remaining chocolate using same method as above. With two forks, dip truffles into melted chocolate, allowing the excess to drain off.
Place truffles on a baking sheet and immediately decorate with peanuts and coconut.
Refrigerate until firm. Resist the urge to eat the entire tray.
I purchased all of my ingredients at my local Walmart last week. Because it’s holiday baking season, the baking aisles are packed with so many great choices. This recipe would also be delicious with Baker’s White Chocolate or Bittersweet.
