Phew! What a whirlwind month December was! Chock full of parties, candies, and family fun! I don’t know about you, but I’m looking forward to some downtime on New Year’s Eve and New Year’s Day.
New Year’s Eve we’ll order Chinese take out, as we do every year. We’ll sit and wait for 30 minutes beyond the time they told us to pick up the order, as we do every year. There’s a good chance when we get home we will find something missing, as we do every year. Traditions aren’t about everything going according to plan, they’re about making memories with your family.
For me, Chinese food is never enough to sustain me for the night. I’m always looking for a snack a few hours later. Perhaps that is because I am worn out from trying to eat with chop sticks?! I like to whip up a few appetizers to share while we’re watching the New Year’s Eve festivities and for the long day of watching football on New Year’s Day.
My favorite appetizer to make is my Easy Artichoke and Spinach Dip. I shared the recipe a few months ago, and it is a big hit with our family and friends.
If you’re looking to create something a bit heartier, try making these Chicken and Salsa Tortilla Bites from Hormel Foods. This appetizer takes less than 15 minutes to prepare and doesn’t require any baking. Get the kids to help, combine Hormel chunk breast of chicken, Chi-chi’s thick & chunky salsa, and your favorite vegetable cream cheese – spread on a tortilla, roll up and serve!
We always seem to have mashed potatoes left over, this year I’m going to put them to work and use them in a Bacon and Mashed Potato Puff recipe. Combine Hormel bacon, mashed potatoes, and cheddar cheese. Spoon into mini muffin tins and bake. Cute idea for a fun appetizer!

Those bacon/potato puffs sound yummy. Then again, how can you go wrong with cheese and bacon?!
