Every year I say I am going to make more time for myself. To do more things that I want to do. And, every year I do not do it. Well, folks, this is the year! I have a big birthday coming up in a few months and it’s high time that I start focusing on me. And you should focus on yourself, too. Because you are just as important as all of the people and things in your life.
With The Texan coaching rugby a few nights a week, I can focus on myself without being interrupted. Practicing yoga, reading, creating new designs for my sign business, and eating dessert all by myself are some things I plan to do.
While shopping at my local Walmart last weekend, I stopped by an awesome in-store sampling of the new Müller® Ice Cream Inspired Yogurt. Oh my gosh. If they hadn’t told me it was yogurt, I would have thought it was ice cream. This yogurt is packed with 7 grams of protein per serving and depending on the flavor, has between 190-220 calories. It’s just the right amount of wrong!
Once I stopped drooling, my brain clicked into high gear and I knew these would make the perfect filling for a frozen yogurt sandwich. Cue the me time dessert!
I started by baking delicious chocolate wafer cookies. Once they were cool, I topped them with Müller® Ice Cream Inspired Yogurt and slipped them in the freezer. Perfectly delicious.
Homemade Chocolate Wafer Cookies
Cream together butter, sugar, brown sugar, and vanilla in the bowl of your stand mixer. There should be no visible granules.
While the butter mixture is mixing, whisk together cocoa powder, flour, baking soda, and salt. Make sure there are no lumps. Sift it if you’d like.
Slowly add the dry ingredients to the butter mixture.
Add milk and mix until just combined.
Divide the chocolate wafer cookie batter in half and form each portion into a log.
Wrap with plastic wrap and refrigerate for at least one hour.
When you’re ready to bake the wafer cookies, preheat the oven to 350 and grease a baking sheet. {Alternatively, you can use parchment or a Silpat liner.}
Slice the cookie dough log into coins that are about 1/4 inch thick. Leave about one inch between cookies on the sheet.
Bake for 7 minutes and rotate the pan. Then bake until 3-4 minutes until the top of the cookie is dry and slightly firm. Remove to baking rack to cool.
Assemble the Sandwiches
After your chocolate wafer cookies have cooled, fill them with a generous amount of Müller® Ice Cream Inspired Yogurt
and top with another chocolate wafer cookie. And repeat until all of the yogurt is gone!
I used Vanilla Bean and Raspberry Chocolate Chip flavors, next go around I’ll use the Mint Chocolate Chip.
Slip them into the freezer for about an hour before eating.
These fit nicely in a quart sized zip top bag for storing in the freezer.
