Doesn’t it seem that everyone you know cooks up Corned Beef and Cabbage for St. Patrick’s Day? Me too! I am not a fan of corned beef, I never have been. {And, it irritates me when people who eat it, write about it, and call it corn beef. Where did that come from?} I would imagine that The Texan ate Corned Beef as a kid, being from Texas he’s eaten all sorts of stuff that I can’t imagine trying!
With the traditional foods out, and our plan to dine at an Italian restaurant to celebrate my half-birthday(!), I decided to whip up a fun Mexican lunch for us.
Mexican foods are my go-to-foods for quick and easy meals. I decided to whip up some Vegetarian Taco Dip using Wholly Guacamole to give my dish the GREEN that it needed! Taco Dip takes me back to college, one of my sorority sisters had the most amazing cook of a mom – and they lived about 30 minutes from campus so her mom was always stocking her mini fridge with tasty treats. I’ve been recreating Jen’s Mom’s Taco Dip for ages!
What you’ll need:
Glass serving dish (you want everyone to be able to see this beautiful dish!)
1 can vegetarian refried beans
1 tsp taco seasoning (make your own if you want, I purchase mine)
1 jar salsa
1 Head iceberg lettuce (I shred mine, it’s cheaper!)
4 Roma Tomatoes, diced
1 8oz container fat free sour cream
2 7oz packages of your favorite Wholly Guacamole
Unsalted Tortilla Chips
What you’ll do:
In a large bowl, mix the vegetarian refried beans and taco seasoning. Once it’s well mixed, spread it on the bottom of your serving dish. Add the salsa, sour cream, lettuce, tomatoes, and Wholly Guacomole. Serve with unsalted tortilla chips.
This dip was light enough to serve as a main course for lunch, but would be great as an appetizer when you’re entertaining family and friends. How was your St. Patrick’s Day? Did you serve anything unique to your family?

I love taco dip. A quick and easy meal. I like shredded cheese in mine minus the sour cream. I’ve never been a big fan of sour cream for some reason. My family makes fun of me since they all love it.
