Welcome June! One of my favorite things about a new month, is looking back on all of the photos that I have taken. Reliving the moments fills my heart with joy and brings a smile to my face. This morning, I was looking back at some photos of my Paleo Buffalo Chicken lettuce wraps and my mouth started watering. That also served as a reminder to write this week’s menu plan.
Monday: I’m going to a charity event for Pitching in for Kids tonight. Fingers crossed I’ll have my photo taken with {former Red Sox pitcher} Tim Wakefield {again}. The Texan and The Boy are on their own. If I had to guess, The Boy will have black beans and rice and The Texan will have steak on the grill.
Tuesday: Rugby night, generally that means YOYO night around here where I repurpose leftovers into new creations or serve breakfast for dinner. We did a great job of cooking just enough and eating everything, so I’m going to have to cook. Most likely, it will be ahi tuna. I love that stuff on the grill. Mmmmm.
Wednesday: The Bruins are on tonight! Playoff hockey is some of the best hockey, don’t you agree? I’m going to marinade some chicken wings to make Jamaican Grilled Chicken Wings. Hopefully the grocery store will stock the crinkle cut sweet potatoes and I’ll bake some of those, too. Yum. I love sweet potatoes with a bit of olive oil, salt, and pepper.
Thursday: Rugby night, did I say that already this week? The Texan’s rugby team is gearing up for their summer season, so they’ll be keeping up with there twice weekly practices. I’m going to grill turkey burgers tonight and hopefully we’ll be able to enjoy dinner outside.
Friday: Buffalo Chicken Lettuce Wraps. These are my new favorite. I’m obsessed with lettuce wraps and spicy foods. Buffalo Chicken Lettuce Wraps combine the two. And, they’re made in the crockpot so clean up is easy peasy!
Saturday: We’re going to a birthday party! Woo-hoo! I love celebrations. I’ll bring my easy artichoke and spinach dip as an appetizer.
Sunday: Grilled Mahi Mahi with asparagus. We’ll grill it all. That makes for a quick and easy meal, and almost no cleaning up!
