The last few months of not posting my Menu Plan Monday are killing our budget, and my waistline. Both of those things need to be trimmed, so I’m throwing myself back into the menu planning ring! A few weeks ago, I posted my menu planning tips and now I’m putting them into practice.
Our local big chain grocery stores didn’t have much in the way sale items this week, so the bulk of my shopping was done at Trader Joe’s. I really like shopping there, and prefer it to the mainstream grocers. It’s smaller, which means your choices are fewer – that saves you time!
Excited to share my Menu Plan Monday!
Monday: Leftover Super Bowl goodies ~ Jamaican Chicken Wings, easy Artichoke and Spinach dip. We’ll either have salad or sweet potato fries.
Tuesday: Marinated Chicken Breast with salad and veggies
Wednesday: Taco Night
Thursday: Oven Roasted Whole Chicken with cauliflower and broccoli
Friday: Homemade Pizza (green pepper and onions!)
Saturday: Chicken Enchiladas (made with leftover Roasted Chicken)
Sunday: Crock pot Turkey Chili
I am interested in Clean Eating. It seems to be an off-shoot of the Paleo diet, which The Texan follows 80% of the time. One of my goals for this week is to find a few clean eating recipes and add them to next week’s menu plan. If you’re a clean eater, I’d welcome any suggestions that you may have!

Our budget was so out of whack, that’s what pushed me to get back into it. It’s amazing how easy it is to pick up the phone for take out when you’re not menu planning. Oh, and I’ll be glad when my waist line starts showing results too!
