How did last week treat you? I’m sure many of you were busy with Valentine’s Day activities. Our Valentine’s Day celebration was very low key, just the way we like it. On the whole, the week was fairly quite, but I did get some super exciting news. I am a Shaklee 180™ blogger! If you’re not familiar with the program, it is a new weight loss program designed to help you not only lose the weight you don’t want, but to help keep it off!
Woot-woot! Toot-too!
Anyhow, we ate some of the things that I planned for last week, but some of the meals got pushed off in favor of tastier items or things that were easier to prepare. There was no Three Cheese Macaroni and Cheese on Saturday, instead we had a healthier version of my grandmother’s recipe for Portuguese Kale Soup.
Here’s what we’ll try for this week:
Monday: Vegetarian Lasagna {I’ll be making two small lasagnas and freezing one for another day!} and green salads
Tuesday: Chicken Caesar Salads
Wednesday: Swiss Chard with Cashew Creme sauce {need photographs for the original post!}
Thursday: Happy Birthday to The Texan! Dinner out?
Friday: Pizza
Saturday: Oven-Fried Chicken {a recipe from Clean Eating magazine}
Sunday: Leftovers or Burritos

The chicken caesar salad sounds really good. I made Irish oatcakes which was a new to me recipe. Delicious!

Oh, I’ve never heard of Irish oatcakes. I’m going to have to look for a recipe – I like most anything with oats in it!

I finally started menu planning again after a long hiatus. I’m trying to feed the fam more gluten free and low grain so I’ve been making a lot of new recipes and all have been so good so far! I also planned breakfasts this week! Yeah!!

Let me know how you do with gluten free. The Texan is primarily gluten free/grain free (he follows Paleo), he loves it. Me? I’d have a hard time passing up that crusty bread!
I don’t bother planning out breakfasts – we eat the same thing every day. My entire family – creatures of habit when it comes to breakfast foods!

Oh, I love cashew creme sauce – and also cashew cheese. Have you tried that? It takes forever to make, but you can stuff pasta with it or make grilled ‘cheese’ sandwiches with it – delicious! I haven’t tried out much new, but will be in the coming weeks.

Cashew cheese?! Nope, never tried it. I’ll be researching that today, it sounds like something I’d enjoy!

I really like the idea of a menu plan. I also think that it is very cool that you make one lasagna for now and one for later. I might try that sometime. 🙂

Thanks, Dawn. Making an extra lasagna is such a time saver! I try to make extra “whatever” for either lunch the following day or a meal in the future. Over the weekend, I made and there was enough for me to freeze two additional meals! Hooray for convenience. My problem is remembering what I’ve put in the freezer!

Menu planning is helpful to avoid the “what are we going to have for dinner tonight” conversation, too! Though we had that conversation this morning!
