Here we are on another gorgeous Monday with a fairly decent weather forecast for the week ahead. I’m starting to feel a bit of optimism about Spring actually arriving. For those of you experiencing snow (still), relish the moment and go outside to play with your kids! It can be tough to look at April snowfall as something fun, but take advantage of it. Your kids will appreciate it more than you know.
You’ll see that I have a fairly easy menu plan this week. Because of that, I’m tackling three new-to-me recipes!
Monday – YOYO (Rugby night!)
Tuesday – Girls Night Out! (Boys are having another YOYO night!)
Wednesday – Homemade Crab Cakes and green salad
Thursday – YOYO (Rugby night!)
Friday – Ground Turkey Pot Sticker Burgers with Spicy Asian Slaw
Saturday – Mahi Mahi and mashed cauliflower
Sunday – Chicken Pad Thai

You know, I hate making crab cakes. Absolutely loathe it. They ALWAYS fall apart. If this recipe falls apart, I just might lose it. The good thing, they ALWAYS taste good!

The crab cakes, which I generally hate to make, were amazing! I plan to make them again – maybe even as soon as this week. Our menu plan got shuffled a bit this week as we had an impromptu dinner party on Friday and had chicken wings last night. I’m making the Turkey Potsticker burgers tonight – and we’ll shoot for the Chicken Pad Thai for Tuesday of this week. That’s the meal I was most looking forward to!
