What I hate most about three-day weekends is that Monday happens on Tuesday. I always feel behind and out of sorts when we get an extra day of family time together. Don’t get me wrong, I love the time spent together, but it does throw off my routine. That’s why my menu plan didn’t happen yesterday. I try not to work on the weekends, aside from my little Instagram obsession.
This week, we’re easing back into our regular routines. Pre-K starts for The Boy tomorrow, and we’re switching to a new school. The Texan’s rugby schedule is back in full swing, with matches every weekend through the end of October. We’re going to be busy, and I love it. And, menu planning will help us stay healthy and eat well.
Monday: Meatball or Chicken Parmesan subs.
Tuesday: Pesto Baked Chicken with mixed vegetables.
Wednesday: Grilled steak or chicken with sweet potato fries.
Thursday: Turkey Tacos Salads. We skipped taco night last week, and I’ve been craving it!
Friday: Homemade pizza night! Last week, we made Pesto, Chicken, Spinach, Tomato, Onion, and Portobello Mushroom pizza. It was so delicious. I loved making it together, and not feeling over stuffed after eating it!
Saturday: College Football and Rugby in the same day can only mean one thing: Chicken Wings!
Sunday: Simple Crock Pot Chicken. Cooking a chicken in the crock pot gives us plenty of leftover chicken for enchiladas, chicken salad, chicken pot pie and more! It’s one of my favorite meals to prepare – and it is so simple!
