Last week was really fun around here and we were able to stick to our menu plan. It’s awesome when that happens! I had an absolute BLAST at the Pitching in for Kids event on Monday. It’s wonderful to see celebrities giving back to the community. I am planning to attend next year’s event, be sure to let me know if you’ll be there too!
This week is going to be fun and b-u-s-y! The Red Sox are in first place. The Bruins are playing for Lord Stanley’s cup this week. And, as if things couldn’t be better, I found out that my mom is coming to visit on Saturday and she’ll be here for a week. One whole week. Yippie! I’d like to say that my mom is going to cook every meal for us while she’s here, but I try not to lie. My mom isn’t a huge fan of cooking, but when she does cook it’s generally quite tasty. Most of the time.
Monday – Steaks on the grill, grass-fed beef for The Texan and tuna for me
Tuesday – Spicy shrimp stir fry
Wednesday – Grilled Chicken Wings and sweet potato fries, just like last week. The Bruins won, so we have to eat the same thing. Right?
Thursday – Turkey Tacos – We make these Paleo by using Boston lettuce as our shell. Great toppings for tacos are homemade guacamole, salsa, tomatoes, and diced onions. I’ll put cheese on mine.
Friday – Burgers on the grill – I’m leaning toward beef for The Texan and turkey for me. Served with The Best Cole Slaw ever. I make that recipe Paleo by omitting the cheese, so sad, the things we do for love.
Saturday – My mom arrives! Whoo-hoo! We’ll grill fish, corn on the cob, and other veggies. I’ll make a delicious green salad and crack open a cold bottle of wine.
Sunday – Sunday is Father’s Day. I’m thinking of roasting a turkey. A friend of mine posted a photo of one she cooked over the weekend, now I am craving it. If I don’t make that, we’ll probably throw some things on the grill and just have a relaxing day.
