Friends, breakfast is a STRUGGLE at my house. The Boy doesn’t want to slow down for five minutes to eat breakfast. There is always “one more thing, Mom” to be built, drawn, or torn down. It’s crazy that he has THIS MUCH ENERGY after fasting for so many hours. But he does. And that’s where this quick strawberry jam comes in.
If it’s a portable, on-the-go food, he’s ready for it. Think apples, bananas, and sandwiches. BUT, he won’t eat an actual sandwich for breakfast [“Sandwiches are for lunch, Mom!”]. One day, I had this awesome idea to make a sandwich using Eggo Waffles as the “bread” with a favorite nut butter and jam squished in between.
Genuis? Probably not. Effective? Yes, because waffles are for breakfast!
While shopping at Target for all the things, I grabbed a box of the Eggo whole wheat waffles and some strawberries for the jam.
This quick strawberry jam is perfect for those busy weekday mornings when you want to encourage you little one to eat breakfast without stifling their creativity.
Clean, dry, and hull a quart of strawberries.
Try not to eat too many of them. I know they are delicious. Especially in late summer and early fall. [If you don’t have access to fresh strawberries, you can use frozen. Let the frozen berries thaw in the refrigerator, drain them well before adding to the sauce pan.]
If you like your jam without chunks of berries, puree the strawberries in the food processor or blender. Otherwise, add them to a 2-quart saucepan with about 1/3 cup of sugar and a tablespoon of freshly squeezed lemon juice.
Cook over medium heat, stirring frequently until the jam begins to thicken. This takes about 10 minutes.
Transfer the jam to a jar and let cool to room temperature. To store, seal jar with lid and place in refrigerator for up to 10 days. It doesn’t last that long in my house!
For the perfect Busy Kid Breakfast, toast two EGGO® waffles and top with your favorite nut butter and a smear of this quick strawberry jam.
Your busy kid might slow down long enough to tell you how delicious your jam is!

You make this look so easy to make! I’m going to try it 🙂
I love strawberry jam! I totally understand where your son is coming from…I wouldn’t even think about a sandwich for breakfast until I got to college. Great idea here! #client
My son has been looking for chunk free jam for months now and our stores just don’t have it. Approx how much sugar and lemon juice do you add? I know it is to taste but are we talking a cup or a tbsp? LOL!! I know if I don’t get it right the first time he won’t even try a second batch! Thank you!!
Hi Marisa,
I add about 1/3 – 1/4 cup of sugar, depending on how sweet the berries are. I find if I use strawberries that I’ve thawed, I need less sugar. You just need a bit of lemon juice – about one tablespoon. If you don’t have lemon, you can use any citrus juice.
The beauty of this jam is you can make it as chunky or as smooth as you’d like!
I hope your family enjoys it!
