“Hello, summer. It’s me, Emily. Are you coming to Cape Cod soon?” This is what I’ve been saying each morning as I take a sunrise walk with our dog, Charlie. I gaze toward the sunrise and hope that today is the day that temperatures rise just a little and the sun shines a little brighter. I am eager for the warm weather to arrive because that means more outdoor entertaining. In my mind, you can’t host a party without serving dessert. Today, I’m sharing an easy no bake dessert recipe for Rice Krispies Ice Box Cake.
Most cakes require baking but this one does not because it’s made with ice cream! I eat ice cream every day in the summer, and this no bake Rice Krispies Ice Box Cake is a super fun way to serve ice cream.
I don’t keep it a secret that desserts made with Rice Krispies are a favorite of mine. Rice Krispies are the perfect ingredient for many delicious desserts. For even more great Kellogg inspiration, check out the social hub here!
Even though no baking is required, you do need to plan ahead to make this no bake Rice Krispies Ice Box Cake. It’s best to freeze your springform pan for 30 minutes prior to assembling the no bake Rice Krispies Ice Box Cake, and you need to allow the cake to freeze for a minimum of two hours before cutting.
The base of the cake is a traditional Rice Kripies treat with rainbow sprinkles added for fun! Once you’ve pressed the prepared Rice Krispies treat into the base of your frozen springform pan, push some of the Rice Krispies treat about 1 inch up the side of the pan. You can use your hands to press it evenly into the pan, or use the bottom of a beverage glass.
Fill the prepared pan with your favorite flavor of ice cream. I used vanilla, because that IS my favorite. Be sure to choose a premium ice cream and let the ice cream sit on the counter for a few minutes to soften. The ice cream shouldn’t be melted, just soft enough to spread with a spatula.
Return the prepared Rice Krispies Ice Box Cake to the freezer and allow to freeze for a minimum of two hours. About 10 minutes before serving, remove it from the freezer allowing the crust and ice cream to thaw slightly.
Remove the ring from the springform pan and cut.
While this is one of my favorite summer desserts, there are some people in my life that aren’t fans of ice cream. (I’m wondering how it’s even possible that we’re friends!) For those friends, I grab some Keebler Fudge Stripes Original cookies.
Ingredients
- 4 TBSP unsalted butter
- 4 cups Jet-Puffed Marshmallows
- 5 cups Rice Krispies Cereal
- 1/4 cup Rainbow Sprinkles
- 1-1 1/2 pints of premium ice cream
Instructions
- Place 9-inch springform pan in freezer.
- In large pan, melt butter, then add Jet-Puffed Marshmallows. Stir frequently until well combined.
- Add Rice Krispies Cereal. Stir until all Rice Krispies are coated with marshmallow mixture.
- Fold in Rainbow Sprinkles.
- Remove springform pan and ice cream from freezer.
- Add cereal mixture to bottom and sides of pan.
- Top cereal mixture with ice cream.
- Return pan to freezer for a minimum of two hours.
- Remove from freezer 10 minutes prior to serving.
- Slice with wet knife. Top slices with whipped cream and additional rainbow sprinkles, if desired.
