Fourteen days ago I began my journey back to my old self. To the woman who was happy with what she saw in the mirror. I am pleased with the results so far – sliding the bar on the scale a bit further to the left each day is exciting and empowering!
Creating a Delicious Smoothie Recipe with Kale
I mentioned earlier this week that The Texan was doing a 3-Day Juice cleanse, that meant we had a lot of kale {and other fruits and veggies} in our house. I started thinking how in the world can I create a delicious smoothie recipe with kale? Maybe I purchased too much? This is what is left after making four smoothie recipes with kale each day for four days.
We had plenty of blueberries in our refrigerator, too. Don’t you love it when there is a great price on your favorite fruits and vegetables?! They looked delicious, so I decided to add them as well.
In addition to the vanilla protein powder, I wanted to add something to make me feel full longer. I decided that oats were the answer!
Chopped kale, blueberries, vanilla protein powder, 1/8 tsp of vanilla extract, a few shakes of cinnamon and 12 ounces of unsweetened vanilla almond milk were blended together for about 5 minutes. I added a few ice cubes and blended it a bit longer. Because I like my smoothies very cold, I pop mine into the freezer while I clean up the mess that I’ve made.
I was surprised that you can’t taste the kale, but I could feel it a bit. While I do enjoy kale in soups, especially my Portuguese Kale Soup, I didn’t know what to expect in a smoothie. The texture of the smoothie was great, even though it was made with my much-loved blender. (It only has three of the four blades left!).
This is quickly becoming my favorite recipe. I’ve tried it with the chocolate powder and it was just as delicious. Earlier today I read a Pumpkin Spice smoothie recipe from Kiersten at Oh My Veggies, she recommends soaking the oats in milk overnight to make your smoothie less gritty. I think I’ll give that a try for tomorrow’s breakfast.

I’ve never had kale gasp, right? I am doing this thing where I force myself to eat stuff that would normally gag me – I may have to try this.

WHAT?!! Just kidding – kale isn’t very common. I find that it doesn’t have much of a taste at all. You can replace it for spinach in most recipes, though it is a bit thicker than spinach. A cup of Kale has 5 grams of fiber – yep 5 grams. It’s an amazing vegetable, give it a shot! I’ve been eating it every day this week and feel more energized. Let me know how you like it!

I love a good smoothie and have put kale in mine a few times but typically stick to spinach since it’s finer…great recipe though, I’ll have to try adding oats, looks yummy!

Can you believe I’d never had kale until last month? It’s so good and great in juices so I can’t wait to try it in a smoothie. In the past, I’ve always used spinach.

A lot of people aren’t fans of kale, or are intimidated by it. I grew up eating it, so it was natural for me to put it in a smoothie! Let me know what you think when you try it that way.
