When you’re snowed in, a great way to pass the time is by baking! I whipped up a batch of these delicious trail mix cookies just before the {first} blizzard of 2015.
I was inspired to make these cookies by The Boy. Like any little boy, he loves cookies. Unlike most boys, he loves Amaz!n™ Prunes. Did you know that these little gems are a good source of fiber and have only 100 calories per serving. Amaz!n Prunes have a low glycemic index, so they keep you feeling fuller longer.
The Boy typically gravitates toward healthier snacks. We always have fruits, vegetables, nuts, and prunes available. Knowing that we were going to be trapped inside for a few days, I wanted to make a trail mix cookie that would be perfect to have as a mid-morning snow day snack or a nighttime treat. Finding that balance was a bit easier once I discovered Amaz!n™ Diced Prunes. One serving of Amaz!n Diced Prunes is a good source of fiber for only 100 calories.
Trail Mix Cookies
Pre-heat oven to 350 degrees. Line baking sheets with parchment paper.
Sift together white whole wheat flour and all-purpose flour. Once you’ve sifted, measure out 1 1/2 cups. Add baking soda, salt, and cinnamon to the mixture and whisk with a fork. Set aside.
In the bowl of your stand mixer, combine sugars and butter mixing until light and fluffy.
Add eggs and vanilla.
Add oats and mix well.
The dough is heavy and thick at this point. You’ll probably need to finish mixing by hand.
By hand, stir in your favorite trail mix-ins. I like mini chocolate chips, chopped pecans, and Amaz!n™ Diced Prunes.
I have to admit, it’s hard not to eat the mix-ins before mixing them in.
Mix it well, you don’t want the mix-ins clumped together.
Using a 1-inch scoop, place cookie mixture onto baking sheet.
Bake for eight minutes, rotate pans from one rack to the other and bake for an additional six minutes. Let cool on baking pan for 5 minutes, then cool completely on wire rack.

- 1/2 cup white whole wheat flour
- 1 cup all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 cup brown sugar
- 1/3 cup sugar
- 1/3 cup butter, softened
- 2 eggs
- 2 tablespoons vanilla
- 1 cup old-fashioned oats
- 1/2 cup mini-chocolate chips
- 1/2 cup pecans, chopped
- 1/2 cup Sunsweet® Amaz!n™ Diced Prunes
Instructions
- Preheat oven to 350 degrees. Line two baking sheets with parchment paper.
- Sift flours togethers, then measure 1 1/2 cups.
- To the sifted flour, add baking soda, salt, and cinnamon. Whisk together. Set aside.
- Cream together sugars and butter. Add eggs and vanilla.
- Slowly add flour mixture.
- Add oats, mix well.
- Stir in mix-ins.
- Using a 1-inch scoop, portion cookie mixture onto baking sheets.
- Bake 8 minutes, then rotate pans from one rack to the other. Bake an additional 6 minutes. Let cool for 5 minutes on baking sheets before moving to rack to cool completely.
- Make 2 1/2 dozen cookies.
