You may remember that a few weeks ago I wrote about The Texan deciding to jump on the Atkins bandwagon and ruining my menu plan for that week. Since then, I haven’t written a meal plan. And it’s been awful. Grocery bill is slightly out of whack, though I attribute that to the amount of meat that I am purchasing for him.
My efforts to go vegan haven’t worked, mainly because I haven’t tried all that hard. I’ve swapped out butter for Earth’s Balance “butter” {which has a stronger butter flavor, I highly recommend it!}, I’m using a soy beverage in my coffee rather than cream {no noticeable difference there either}. For now, I consider myself a part-time vegetarian as I’ve been unable unwilling to give up chicken wings, crab cakes and lobster.
I’m going to try to meal plan again this week and see how it goes. I’ll be enjoying most meals sans chicken/turkey/steak. It’s been too hard to cook two separate meals every night. Time for me to get smart and make it easier for myself.
