Friends, I’m pretty sure that I’ve overdone the scheduling thing. Though it wasn’t intentional, we have afternoons packed with activities. Which makes dinner time C-R-A-Z-Y. Who wants to rush in the door and head straight to the kitchen? Not me! That’s why I’m sharing these easy meal ideas as part of this week’s menu planning post.
Monday: I like to start the week off with an easy meal idea, so tonight we’re having baked chicken breast with green beans and homemade potato salad.
Tuesday: One of my favorite nights of the week – Taco Tuesday! Only this week, I’m serving burritos instead of tacos. I like to use brown rice in my burritos rather then white. The nutty texture is the perfect addition.
Wednesday: Another themed meal – Wings on Wednesday. Baked chicken wings with homemade broccoli slaw. Simple to prepare and packed with flavor.
Thursday: Girl’s Night Out! That means, The Texan and The Boy are fending for themselves. I hope they enjoy the chicken pot pie from the freezer! Sometimes, it’s okay to take a little help from the store!
Friday: Can you say pizza?! We have pizza every Friday night. It signals that the week is over and is a fun tradition.
This week, I hope to have a little time to bake. The Summer weather is slowly slipping away. I love the crisp air in the morning that tells us Fall is just around the corner. If there’s time, I’m going to whip up a batch of Two Bite Coffee Cake Muffins.
