Hello again!
I am so excited to be sharing another week of menu planning with you. Last week, we ran into a few snags due to the blizzard and me failing to take things out of the freezer. I haven’t planned anything too fancy this week. Our weather is going to be miserable, and I don’t find that very inspiring.

Monday: Leftover Turkey Chili
Tuesday: Turkey Taco Tuesday (we didn’t have tacos last week!)
Wednesday: Chicken Caesar Salads with crusty bread
Thursday: Stuffed Peppers
Friday: Pizza
Saturday: Three-cheese macaroni and cheese
Sunday: Marinated Chicken Breast with mashed cauliflower and salad.

I have been craving mac & cheese like crazy lately. I think it’s the weather!
Please don’t talk about weather, Kiersten! We had a blizzard over the weekend that left us without power for a day! I thought I would go crazy {and not to mention freeze!}. I am happy to report that things are getting back to normal – there are a number of people still without power – and we’ve got more snow in the forecast for Thursday!
I might move the mac & cheese ahead a few days, I’ve been craving it too! Have you ever tried boiling the pasta in milk? I did that once and it made the mac & cheese extra creamy – almost to the point that you couldn’t eat it. The milk is absorbed into the pasta, so there’s nothing to drain. This time around, I’m going to try half water, half milk and see how that goes.

I love having mashed cauliflower and loading it up as if it was a baked potato. Yum!
It is so tasty, and doesn’t leave you with that stuffed feeling like a baked potato does!
