On Sunday mornings, I love having a big, fancy breakfast with baked goods. Typically, I am too lazy to bake anything and we have toast. Hardly baked goods, I know. Yesterday morning I had a lot of energy, and it was still fairly cool outside so I didn’t mind heating up the oven for a delicious blueberry tart.
It was easy to make. I used one Trader Joe’s frozen pie crust that was thawing in our refrigerator, Trader Joe’s blueberry preserves, cinnamon, and nearly one-pint of organic Blueberries.
Want one for yourself? Here’s how to make it:
Preheat oven to 450 degrees.
Place thawed pie crust on pizza stone or baking pan. {The Texan thinks I should have used a baking pan.}
Spread a thin layer of blueberry preserves on top, leaving 1-2 inches of crust exposed. Sprinkle lightly with cinnamon.
Add fresh blueberries. Fold crust in toward the center.
Bake for 30 minutes until golden brown.
You can see it was so delicious, that I didn’t even have time to snap a photo before everyone was digging in!
This recipe is simple and quick. This would make a wonderful dessert too, just top it with homemade vanilla ice cream and you’re good to go! It would also be wonderful with strawberries or raspberries. Perhaps spreading the crust first with Mango Butter and topping with fresh mangoes would be good too. Hmmm….I think I know what we may have next weekend!
