Preparing blueberry compote takes about 20 minutes. You can prepare it the same day you want to eat it, but trust me when I say it is even more delicious when made ahead of time.
One of my favorite memories of summer is picking blueberries from a local blueberry farm. We always pick more than we can eat and freeze them to use in the colder months. If you haven’t picked your own and frozen them a head of time, don’t worry! You can pick up a package of frozen blueberries in the Walmart freezer aisle while you’re shopping for the Kellogg’s® Eggo® Star Wars Galaxy Adventure™ Buttermilk Pancakes.
Blueberry Compote is a wonderful topping for pancakes. It adds a layer of flavor and texture that a pancake alone cannot provide. Blueberries are one of my favorite fruits to cook and bake with because they don’t take a lot of time to cook. Keep in mind, though, that the juice from blueberries stains. Wipe up any spills immediately.
This recipe is perfect for making during the busy holiday season because it doesn’t take a lot of time to prepare. If you have children, they’ll love to watch how the blueberries pop in the pan as they cook.
Ingredients
- 2 cups frozen blueberries
- 1/4 cup granulated sugar
- 2 TBSP water
- 3 TSP lemon juice
Instructions
- In small saucepan over medium heat, combine 1 cup of frozen blueberries, sugar, water, and lemon juice.
- Cook for 10 minutes. Stirring often to break up the berries.
- Add remaining 1 cup of frozen blueberries.
- Cook for 7-9 additional minutes. Stir occassionally.
- Transfer to bowl or glass jar for storage.
Notes
Best if served warm. Cover and store up to one week in the refrigerator.
