One of my favorite things to eat is banana bread. But, it’s too messy for a toddler. Here’s an easy recipe, full of whole grains and free of eggs {and preservatives}!
Ingredients: (Because this is baking, I did measure. Completely out of character for me!)
1 1/2 cup whole wheat flour
1 cup old-fashioned oats
1/3 cup dark brown sugar
2 tsp baking powder
1 tsp baking soda
dash salt
2 mashed bananas
3/4 cup organic milk or soy milk
1/4 cup applesauce
1 tsp vanilla
1 tsp cinnamon
Cooking Instructions:
- Preheat oven to 400. Grease and flour mini muffin pans, line muffin pans with muffin liners, or {gasp!} spray mini muffin pans with non-stick cooking spray.
- Combine dry ingredients {except cinnamon} in large bowl.
- In smaller bowl, mash bananas and add milk, applesauce, vanilla and cinnamon.
- Add the banana mixture to the dry ingredients and mix well.
- Using teaspoon, fill mini muffin tins three-quarters full with batter.
- Bake 10 -12 minutes until golden brown. Let cool for 3-5 minutes before removing to wire racks. Allow to cool completely, if you can!
- Store in an airtight container or freeze
