When you think of summer picnics, what comes to mind? For me, it’s fried chicken with delicious side dishes like an easy potato salad. While I love to cook, I do not fry anything – especially not chicken. But when I stopped by my local Walmart Deli and saw that they offered fresh, fried chicken, I had to buy an 8-piece package.
With Fourth of July just around the corner, it was a perfect time for me to practice making one of my favorite summer side dishes: easy potato salad. This one is fun because it’s red, white, and blue!
How to make an easy potato salad
What You’ll Need
1 1/2 pounds small red and blue potatoes
1/2 cup mayonnaise
1 TBSP garlic powder
1 TBSP black pepper, freshly ground
2 TSBP dill pickle juice
1/2 cup scallions, chopped
Optional mix-ins:
2 eggs, hard-boiled
2 pickles, diced
1 small red onion, chopped
2 celery ribs, chopped
What You’ll Do
Clean the potatoes well and place them in a large pot, covering with about 1 inch of cold water. For this easy potato salad, you’ll be leaving the skin on. That’s where the good nutrients are!
Bring water to a boil, reduce heat and simmer 20 minutes or until the potatoes are fork tender. Place potatoes in a cold water bath for about 20 minutes. They need to be cool enough to handle.
Meanwhile, chop the scallions {and other optional mix-ins if using} and set aside 2 tablespoons for garnishing.
In a small bowl, combine mayonnaise, garlic powder, black pepper and pickle juice. Add scallions {and other optional mix-ins if using} and mix well.
Cut potatoes into bite sized pieces. Be careful – they may be hot inside!
Mix potatoes with the dressing mixture. Be sure it is well combined. Refrigerate for 30 minutes before serving allowing the flavors to combine.

Instructions
- Clean potatoes and add to large pot.
- Cover with one-inch of water and bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Add cooked potatoes to water bath and let soak for 20 minutes.
- Combine mayonnaise, garlic powder, black pepper, dill pickle juice, and scallions in a small bowl.
- Chop potatoes into bit size pieces.
- Mix the sauce mixture and the potatoes.
- Chill 30 minutes before serving.
