One of my favorite comfort foods is mac and cheese. It is a quick and easy meal that your entire family can enjoy. Sometimes, I like to kick it up a notch and make lobster mac and cheese. This comfort food is perfect for a weeknight meal, a side dish at a holiday gathering, or can even be baked in muffin tins for an appetizer. Once you see how simple it is to make, you’ll be adding lobster mac and cheese to your regular meal rotation.
I know, lobster mac and cheese sounds so fancy and too labor intensive for a weeknight meal. Trust me when I say that this meal takes 45 minutes start to finish, including cooking time! Oh, and here’s a little secret to help you clean up just a little bit faster: Scotch-Brite™ Brand sponges.

I don’t mind if you tell your friends about my time-saving clean up tip. It’s always good to share with friends. Except for lobster mac and cheese. Frankly, it’s so good, you won’t want to share it with your friends!
Lobster mac and cheese can be made with any type of short pasta you like. I am a bit of a traditionalist, so I did opt for the macaroni-shaped pasta. In the past, I’ve made it with penne, ziti, farfalle, and even cavatappi! Whatever shape you use, be sure to prepare it following the package cooking instructions.
Here’s another tip: Do NOT rinse the pasta. Drain it and return it to the pan. Rinsing the pasta removes the starches that help the cheese sauce stick to each piece of pasta.
This simple lobster mac and cheese can be served piping hot in under an hour. Perfect for weeknight meals after soccer practice, lazy Sunday dinners, or a Thanksgiving side dish.

Ingredients
- 8 ounces short pasta of your choice (macaroni, penne, ziti, cavatappi, etc)
- 2 tablespoons unsalted butter
- 1 small white onion, diced
- 1 garlic clove, minced
- 3 tablespoons flour
- 12 ounce milk, slightly warmed
- 1 cup sharp white cheddar cheese, grated
- 1 cup gruyere cheese, grated
- 7 ounces lobster meat, cooked
- ½ cup panko bread crumbs
Instructions
- Preheat oven to 350 degrees. Spray baking pan with non-stick spray.
- Cook pasta in heavily salted boiling water following package instructions. DO NOT DRAIN.
- Warm the milk in the microwave or a small sauce pan. You'll be using the milk to make the cheese sauce.
- In a sauté pan, add two tablespoons of butter and place over medium heat. Add diced onions and garlic. Cook until onions are translucent.
- Add flour and whisk for 1 minute.
- While whisking, slowly pour in heated milk. Continue whisking until thickened. Once thickened, remove from heat. Add salt and pepper, if you wish.
- Add cheese and stir until melted.
- Add the cooked pasta and lobster meat to the cheese sauce. Stir to combine.
- Sprinkle with bread crumbs and bake in oven for 20 minutes.
