Whether you’re a full time stay at home mom, work full or part time, or a student when it comes to making dinner during the week after a hectic day, I don’t know about you but I sometimes lack inspiration or motivation to spend time in the kitchen slaving over a hot stove. However, I always face the battle of “I want to eat healthy” and “I want my food to taste good”.
Here is a quick and easy recipe to help those tiresome days with a great idea for dinner. With the summer months upon us I have chosen something that isn’t too heavy and perfect for those summer evenings. Smoky chicken with a warm corn and potato salad is a really great meal that has lots of summer flavors; it is quick and easy to make – give yourself between 20-30 minutes (including preparation time).
To make this meal you will need:
1.1lbs (500g) of salad potatoes
2 large corn cobs (you can substitute this with canned corn)
½ red onion, thinly sliced
Juice of 1 lime
1.25oz of olive oil
2 garlic cloves, crushed
½ – 1 teaspoon of sweet smoked paprika
4 skinless chicken breasts, each halved across the middle to make 2 thin slices
Small bunch of coriander, roughly chopped
Lime wedges (optional), to serve
Bring a large saucepan of water to boil. Cook the potatoes for 12 minutes, adding the corn after 6 minutes. Cook until they are both tender, the drain them well.
Mix the sliced red onion with the lime juice and half the olive oil in a large salad bowl.
Mix the remaining oil with the garlic, paprika and seasoning in a shallow bowl, then toss the chicken into the bowl until it is completely coated.
Heat the griddle pan, then griddle the chicken for 3 minutes on each side until they are cooked through. Put the potatoes into the bowl with the onions.
Stand a corn cob on one end on a chopping board, and then slice it down the length, cutting the kernels off in strips. Mix into the potato salad with the coriander and seasoning. Serve the potato salad alongside the smoky chicken, with lime wedges if you are using them.
This is a very simple but delicious summer meal! For me it added something a little different to my week day meals when I didn’t want to spend a lot of time preparing food and then cooking. This is an easily adaptable recipe too; you can add a range of different flavors / spices to the chicken coating or add other ingredients to the potato salad. I hope you have fun trying out the recipe. It will save you from settling for the same old meals week in week out.
