Back to School time is always a busy time of year. It’s as if the eight weeks of summer suck out our memory and cause us to become completely disorganized when it comes to fall dinners. Although I do menu plan each week, there are days when our schedule gets crazy and I’m looking for an easy back to school meal idea. That’s where PillsburyBiscuits come in.
I saw a great recipe on their website for Grilled Cheese Sandwiches and decided to put a twist of my own on it using one of my favorite seasonal ingredients, apples.
Following the preparation instructions for the biscuits, I grilled them in a skillet. Three minutes per side. {Confession: I burnt the first round because I wasn’t paying enough attention. Use your timer or be mindful that they’re cooking!} While they were grilling, I sliced a gala apple into thin slices and grabbed shredded cheddar cheese from the refrigerator.
After each side browned, I added the cheddar and apple slices to the each of the biscuits. Turn your heat down to low. The trick to a delicious grilled cheese and apple biscuit is “slow and low”. I cooked them for another five minutes, until my cheese was melty and gooey and squished two biscuits together. {Yum!}
I used the same method that I use for cooking grilled cheese with bread, and they turned out fantastic! Think of all of the exciting combinations that you could create – brie and pear, turkey and havarti, roast beef and asiago. It might even be fun to create a dessert sandwich – can you say hazelnut spread. Or even grilled peanut butter and jelly. Pillsbury created an amazing recipe booklet full of inspiring and creative recipes.

I grew up in New England and EVERYONE up there knows that there is nothing better than apples and cheddar cheese so this looks like a delicious idea!
