This year, our Cinco De Mayo Celebration could have been called the Viente y Seis De Mayo Celebration, as that’s when we finally celebrated. {I’ll save you from googling…that’s 26th of May!} The Kentucky Derby was on May 5, so we were busy with Mint Juleps and fancy hats.
Ok, I lied. We didn’t have Mint Juleps, and I didn’t wear a fancy hat. But, we did devote that day to the Derby. The following weekend we attended an alumni Rugby match and the weekend following that we attended a ruby tournament.
The next thing I knew, we’d totally missed out on Cinco de Mayo. Over the Memorial Day weekend, I decided to squeeze it in. Because I’m crazy like that. And, because I knew we’d be doing lots of eating any way.
We whipped up a batch of my not-famous-but-should-be Margaritas and served tortilla chips with Herdez salsa casera to get us started. Can you say tasty?! This was my first time trying the salsa and it was excellent. Just enough heat but not too much. The Boy liked it, too.
Our main course was fajitas. They were excellent and worked well to accommodate a variety of dietary restrictions. I like chicken or shrimp fajitas, with lettuce, tomato, sour cream, and freshly made guacamole. My mouth is watering as I think about it.
My one regret. I didn’t make dessert. I would have loved to dig into Caramel Apple Fondue, but I’ll be saving this recipe for a rainy day.
