Can you believe that Easter is less than two weeks away?! I cannot! Since The Boy was born, The Texan and I have been feeling our way through holiday traditions. We’ve started celebrating St. Patrick’s Day with a Leprechaun Trap and, since moving to Cape Cod, have chopped down our own Christmas tree from a local tree farm. We’ve even tried going out for Thanksgiving Dinner; I don’t recommend because there aren’t enough leftovers! When holiday that we’re just getting into is Easter. Aside from a small Easter egg hunt in our yard, a few decorations and eating, we don’t do much.
After hosting both Thanksgiving AND Christmas this year, I don’t want to prepare another elaborate feast. What I want to do is create a quick and easy meal that my family can enjoy together; something different but not time consuming. When I saw the coupon for $1 off Kraft Fresh Take, I thought it would be fun to give it a try.
Spring-time weather encourages me to incorporate more fresh fish into our diet; and Italian Parmesan Crusted Cod sounded perfect for a balanced approach to our Easter meal. The Boy is going through a phase where his palate is quite picky. My hope was that the combination of parmesan cheese and Italian seasonings would win him over – it worked! I paired it with fresh tomato slices and a medley of black, red, and brown rices.
This recipe is easy, peasy! While shopping at your local Walmart, look for the Packaged Deli section where you’ll find three great varieties hanging near the shredded cheeses. If Italian Parmesan doesn’t delight your taste buds, give the Southwest 3-Cheese or Cheddar Jack with Bacon a try! {We had the Southwest 3-Cheese with chicken. Oh. My. Deliciousness!}
I purchase my fish from our local fish market, however thawing frozen fish will work just fine in this recipe. Cod is a reasonably priced fish and readily available here on Cape Cod; if it isn’t available in your area try another flaky whitefish such as grouper or halibut.
While your oven preheats, open the packing to mix the breadcrumbs with the cheese. Add your fish one piece at a time. By the time you’re finished prepping the fish, your oven should be ready to bake them. I cannot get over how easy the instructions were to follow. It was three simple steps! Open the package to combine the ingredients, wet your protein, coat your protein. Done.
I slid my baking sheet into the oven and let them cook for 15 minutes.
Because there was virtually no cleanup (win!), I used that time to create a few Easter printables.

Normally we have ham for Easter, but this year I refuse to have the ham. I don’t eat it and my Hubs doesn’t really like a lot of it. I haven’t decided yet what we are having, but you fish looks very promising.
